High Protein Savoury Breakfast Muffins

  • 3 whole eggs (approx 170ml)

  • 4 egg whites (approx 140ml)

  • 30g spinach

  • 60g 97% fat free champagne ham

  • 70 g cherry tomatoes

  • 40g Coles low-fat tasty cheese

  • A pinch of salt & pepper


  1. Preheat the oven to 160 degrees and lightly grease cupcake moulds with butter or spray oil

  2. Whisk the eggs in a bowl until fluffy and then add all other ingredients and mix through evenly. Season to taste.

  3. Separate mixture into 6 individual cupcake moulds and pop into oven for about 10 minutes or until the muffins bounces back when poked
