High Protein Lasagna

High protein easy and quick lasagna.

  • 300g Woolworths heart smart beef mince

  • 100g Latina Fresh Lasagne Sheets

  • 350g Eggplant

  • 250g Woolworths light ricotta

  • 50g leggo's tomato paste

  • 200g woolworths whole peeled italian tomatoes

  • 50g onion

  • 25g Bega So Extra Light and Tasty shredded cheese

  • 2 cloves of garlic

  • pinch of ginger and mixed herbs


  • Cook two cloves of garlic and onion. Once that's done add the mince. Add small pinch of ginger, mixed herbs and tomato paste. Once it's mixed in add peeled tomato and bring to boil. Reduce to low heat until the sauce thickens.

  • Cut eggplant into thin slices and season with salt and pepper. Grill both sides.

  • Preheat oven to 200 degrees. Reduce to 180 degree and put the lasagne in to cook.

  • Layer starting with sauce, sheet, ricotta, sauce, eggplant, ricotta, sauce and top with another sheet and ricotta. Finally sprinkle 25g cheese on top and cover foil over the container.

  • Cook for 10 minutes in the oven, take the foil off and cook for another 20-30 minutes.

Notes: This can be change into many different variations based on personal preference and macro allowance. Something different than usual meat, rice and vegetable lunch options.
