Low-Fat Vanilla & Berry Muffins

  • 300g self-raising flour

  • 100g brown sugar

  • 225 ml low-fat, or skim milk

  • 1 egg

  • 1 tablespoon vanilla essence

  • 125g raspberries

  • 125g blueberries


  1. Preheat oven to 200 degrees and pop in cupcake moulds into ea compartment of a cupcake tin.

  2. Mix flour and sugar together, then mix through the berries. Add in the remainder of the ingredients and combine, making sure not to overmix.

  3. Divide batter among prepared muffin moulds in tin. Bake for 25 minutes or until an inserted skewer into the middle of the muffin comes out clean. Best served warm.
