Salted Caramel Protein Pudding

Ingredients

  • 100g butternut pumpkin

  • 40g egg white

  • 40g Synergy 5 Salted Caramel

  • 3g Wards baking powder

  • 40g Peter's No Sugar Added Vanilla Ice Cream

  • 10g almonds

  • 20ml Walden Farms maple syrup

Directions

  1. Peel and cut butternut pumpkin into small cubes before placing into a steamer for 5-10 minutes or until soft enough to mash.

  2. While steaming, mix egg white with all dry ingredients.

  3. Once steamed, mash pumpkin into a smooth paste and mix with egg white mixture.

  4. Beat into a smooth texture.

  5. Lightly coat a tall ramekin with coconut oil and pour mixture in.

  6. Crush almonds in a mortar and pestle and place in a small pan over high heat until golden brown.

  7. While cooking almonds, place ramekin in the microwave and cook on high for 1-1.5 minutes.

  8. Remove ramekin once cooked to be firm but spongey to touch and turn onto a serving bowl.

  9. Place ice cream on top, sprinkle almonds and add maple to taste.

Note: Some puddings may rise too high in the microwave, causing it to over flow. In these instances, a stop start method may be required in 15-30 second allotments.
